Topo Island Cheese

Topo Island Cheese is obtained from the excellence of nature that covers the Azores islands.

Produced in the beautiful S.Jorge Island, is a matured cheese, with semi hard consistency, but always in a pale yellow colour. Also present irregularly shaped holes evenly spaced. With a strong, neat and slightly sharp bouquet. It is produced with raw cow´s milk, and with pasteruzied cow´s milk.

Aged minimum: 2 months

Available in whole and simply sliced.

São Jorge DOP Cheese 24 months aged

São Jorge PDO (Precede Designation of Origin) Cheese is obtained from the excellence of nature that covers the Azores islands.

Produced in the beautiful S. Jorge  island, is a matured cheese, with hard consistency, but always in a pale yellow colour, our cheeses also present irregularly shaped holes evenly spaced.

It is reported that the beginning of the production of São Jorge PDO Cheese is approximated to the discovery of that island (mid-15th century). Its manufacture was encouraged by the Flemish community, experienced food producers such as meat, milk and their derivatives. The distinctive characteristics of São Jorge PDO cheese are due to the climatic conditions of that region, that confers pastures of various crops and consequently have a positive influence on the quality of the milk.

With a strong, neat and slightly sharp bouquet, it is produced only with raw cow´s milk, salt and rennet.
